Selling meat via the Internet challenges traditional butcher shop codes. Founded in 2013 by Rémy Dubernet, Legoutduboeuf.fr (“the taste of beef”) sells carefully selected cuts of meat online. His clients are individuals, restaurants, and public entities.

With my family’s history, I developed a taste for fine foods. I wanted to promote the work of livestock breeders and enable the general public to discover high quality products,” explains the Montpellier native born into a family of winemakers.

The site offers recipes and particular cuts of meat that are seldom used by French butchers.

Trained as a mechanical engineer, Rémy Dubernet changed his professional direction, driven by a desire to become an entrepreneur. Assisted by Réalis, a regional startup incubator for companies involved with the social and solidarity economy, he set up his company at the Montpellier Métropole Market of National Interest (MIN) in 2014.

My business activity corresponded well to the available equipment at the site. I probably saved 30% on my lease and equipment. On top of that, I have access to a real network of entrepreneurs in the agri-food sector,” he exclaims.

School cafeterias

Many factors enter into account, including feeding, animals’ physiological rhythm, and even the choice of slaughterhouses. Product specifications are elaborated with livestock breeders in the Aubrac, Lozère, and Aveyron departments, and then offered on the website. The company initially targeted selling to individuals, but our business model has evolved:

Individuals represent 35% of our sales. As we grow, more of our clients are restaurants, fine food stores, and even school cafeterias at junior high schools in the Hérault department. We will soon also supply high school cafeterias,” adds the CEO.

The company now has three employees.
